Hungarian domestic chicken soup

(easy to make)










Ingredients:

1 whole chicken
1 kohlrabi
0,5 celeriac
2 parsley
7-8 big carrot
1 onion
0,5 little savoy cabbage
1 stock cube
2 tablespoon salt
varmicelli


1, Clean the chicken and cut it into pieces (eg. leg). Clean the vegetables. Cut the carrots and parsleys into 4-5 cm pieces.

2, Put the chicken and the vegetables into a 4-5 litres pot and pour water on. Cook it in a very slow owen. Add the salt and the stock cube in when it begins to boil. Cook it for about 80-120 minutes (depend on the chicken's age, the older the chicken is, the more cooking is needed).

3, Cook water in a small pot and add in the varmicelli. Cook it for about 6-8 minutes then filter it.

4, Remove the vegetables from the soup and the chicken, then filter the soup. Add the vermicelli into the filtered soup and serve it until it is warm.

Preparation time: ca. 2-2,5 hours

Turnover-pie (Béles)

(easy to make)










Ingredients:

1 kg potatoes
35 decagram flour
6-7 tablespoons of cooking-oil
1 tablespoon salt


1, Cook the potatoes in salted water. When the potatoes are ready, break them, and add in the flour. Knead together the potatoes with the flour. Add more flour in, untill it can be rolled out.


2, Cut the mass into palm-sized pieces, and form balls from them. Roll out the balls, and fry them.

Preparing time: ca. 50 minuts (without frying)

Note: Don't put the rolled out balls on top of the otherbefore fry them, because they will stuck together.

Vegetable chicken bits

(easy to make)










Ingredients:

70 decagram chicken breast
30 decagram green peas
30 decagram sweet corn
4 medium-sized tomato
3 green pepper
40 decagram green beans
1 tablespoon salt
1 teaspoon pepper
1 dash of coriander
1 dash of parsley
1 teaspoon basil
1 teaspoon ground rosemary
1 teaspoon thyme
5 tablespoon cooking-oil
1,5 litre water


1, Cut the chicken into small pieces and  braise it in the oil. Dust it with the spices, braise it a bit more then pour the water on.

2, Cut the tomatoes and the green peppers into small pieces. Add the peas, the corn, the beans, the tomatoes and the green peppers to the meat and cook them together for about 60 minutes (untill it will be juicy), stirring it once or twice till cooking it.

Preparing time: 70 minutes

Note: Serve it with rice as a trimming, it will be more filling.

"Elephant ears" in sesame

(easy to make)











Ingredients:

60 decagram leg of pork
3 eggs
4 tablespoon flour
5 tablespoon breadcrumbs
3 tablespoon sesame
salt

for trimmings: 60 decagram potato, mixed pickles


1, Cut the pork into finger's breadth slices and beat it thin. Break the eggs and beat it with a fork untill it getting foamy. Mix the sesame with the breadcrumbs.

2, Salt the pork slices, coat them in flour, then coat them in egg, the coat them in sesame with breadcrumbs. Fry the slices in hot cooking-oil until each side of the slices getting red.

3, Meanwhile, peel the potatoes and cut them into middle-sized pieces. Cook them in water with 1 tablespoon of salt for about 30 minutes. Filter it when the potatoes are ready. Boil the oil again and fry the potatoes in it for 5-10 minutes.

Preparation time: 65-75 minutes

Transylvanian potato with pasta

(very easy to make)

Great-grandma's recipe












Ingredients:

1 kg potato
0,5 kg pasta
2 tablespoon salt


1, Wash the potatoes and bake it in a slow oven without peeling for about an hour (if the potato pieces are large, bake them a bit more).

2, When the potatoes are ready, cook the pasta in water, then filter it. In the meantime, peel the potatoes before getting cold and break them to pieces with a fork. Mix the filtered pasta to the potates, add in the salt and mix it well.

Preparation time: about 75 minutes

Crabsalad with mozzarella

(easy to make)










Ingredients:

500 g crab
3 tablespoon olive oil
4 medium sized tomato
1 cucumber
1 mozzarella
1 green pepper
1 teaspoon salt
3 dl natural yogurt
1 bag spring salad dressing


1, Clean the tomatoes and the green pepper, then cut them into small pieces. Peel the cucomber and cut it into small pieces. Pour off the liquid from the mozzarella and cut it into small pieces. Mix the vegetables with the mozzarella and salt it.

2, Roast the crab in 2 tablespoons of olive oil in a slow oven. After the crab boils away its liquid roast it for more 10-15 minutes.

3, Mix the dressing with 1 tablespoon olive oil and add in gradually the natural jogurt during mixing it. Add the dressing into the vegetables. Mix 90% of the roasted crab to the salad. The other 10 % will be the decoration on the salad on the portions.

Preparation time: 40 minutes

Giblets with rice

(easy to make)










Ingredients:

1 kg pork shoulder-blade
25 decagram rice
3 tablespoons of cooking-oil
1 stock cube
2 tablespoons of salt
1 teaspoon pepper


1, Cut the meat into small pieces, roast it in the oil and pour 1 litre water on. Add the salt and the pepper in and cook it together until the water will boil away from it, then fry it a bit more.

2, Cook 1,5 l water in a pot, add in the stock cube and the rice and cook them together for 15-20 minutes (until the rice will be soft).

3, Filter the rice and mix it to the meat. Serve it with pickles.

Preparation time: about 60-70 minutes

Peach soup

(easy to make)










Ingredients:

1 bottled peach
2 dl whipping cream
2,5 l water
2 tablespoons of flour
2 heaped tablespoons of sugar
1 teaspoon clove


1, Pour off the liquid from the peach and cut them into small pieces. Take the peach into a pot, add 2,5 l water, the clove and the sugar into it. Cook it in a slow oven.

2, Add the whipping cream gradually to the flour during mixing it. Mix it with a mixer for 1-2 minutes in a low grade. Scoop out a few tablespoons of liquid from the peach and add it into the whipping cream, then mix it together.

3, Add the mixture into the peach's liquid, mix it and cook it together for more 1-2 minutes. Then let it get cold. Serve it cool.

Preparation time: 20 minutes
 
Note: Pulp some pieces of peach with  a few tablespoons of whipping cream in a mixer and add it into the soup. In this way it will be more delicious.

Cherry soup seasoned with cinnamon

(easy to make)










Ingredients:

1 bottled sour cherry
2 dl whipping cream
5 dl water
1 tablespoon flour
2 tablespoons of sugar
1 teaspoon cinnamon


1, Pour off the liquid from the cherry, and rinse the cherry out with fresh water, then pour off the water. Take the cherry into a pot, add 5 dl water, the cinnamon and the sugar into it. Cook it in a slow oven.

2, Add the whipping cream gradually to the flour during mixing it. Mix it with a mixer for 1-2 minutes in a low grade. Scoop out a few tablespoons of liquid from the cherry and add it into the whipping cream, then mix it together.

3, Add the mixture into the cherry's liquid, mix it and cook it together for more 1-2 minutes. Then let it get cold and take it into the fridge for 4-5 hours. Serve it cool.

Preparation time: 15 minutes (without cooling)

Transylvanian paprika potatoes

(easy to make)











Ingredients:

1 smoked sausage
1 big sized onion
2 tablespoons of sweet paprika
1 clove of garlic
1,5 kg potatoes
10-12 bay leafs
1 tablespoon of salt
1 teaspoon of pepper
2 tablespoons of cooking-oil
1 stock cube


1, Peel the potatoes and the onion and cut them into small pieces. Slice the sausage. Steam the onion on the oil in a slow oven. Add the sausage, the salt and the pepper to the onion. Cooki it till the sausage slices become red. Add the sweet paprika to the sausage and onion mixture and cook it for 1 more minute.  Pour 1 litre water on, then add the potatoes to it. If the water doesn't cover the potatoes, pour more water on it.

2, Pulp the garlic. Add the garlic, the stock cube and the bay leafs to the potatoes when it start to boil. Cook it for 45 minutes. Then shatter a few pieces of potates in it. Mix it in its liquid. It will be ready when it is juicy.

Preparation time: ca. 1 hour

Potato salad - V

(easy to make)











Ingredients:


1 kg potatoes
5 eggs
1 medium sized onion
150 ml mayonnaise
150 ml natural yogurt
150 ml sour cream
2 teaspoons of pepper
2 tablespoons of salt


1, Cook the potatoes in their jackets for 40 minutes in water with a tablespoon of salt. Then peel them and slice them to 4-5 mm thick slices.

2, Cook the eggs (7-8 minutes from boiling), then peel them and slice them.

3, Mix the mayonnaise, the natural yogurt, the sour cream, 1 tablespoon of salt and the pepper.

4, Peel the onion and slice it. Mix the prepared ingerdients and refrigerate it for 2-3 hours long. Serve it cool.

Preparation time: 60 minutes (without cooling)

German pasta salad

(very easy to make)











Ingredients:

250 gram pasta
175 gram natural yogurt
175 gram sour cream
175 gram mayonnaise
1 medium sized red californiain pepper
1 canned sweetcorn
200 gram bottled green peas
4 pieces medium sized pickled gherkin
20 decagram "Parisian" turkey cutlet
salt


1, Cook the pasta in salted water. During cooking the pasta, mix the natural yoghurt with the sour cream and with the mayonnaise with 2-3 dashes of salt. Cut the pepper, the gherkin and the cutlet into small pieces.

2, When the pasta is ready, filter it and take it to a big bowl. Add the mixed sauce, the pepper, the gherkin, the cutlet, the peas and the sweetcorn to the pasta and mix it well.

Preparation time: 15 minutes

Fruit with cinnamon in glass cup

(easy to make)











Ingredients:

2 bananas
1 canned mandarin
1 pear
2 fuyu persimmons
1 teaspoon of cinnamon
1 vanillin sugar
25 ml water


1, Mix the vanillin sugar with the cinnamon and add in gradually the water during mixing it.

2, Peel the fruits and cut into small pieces. Mix the fruit well, then pour it with the water. Separate it for 2-3 portion and take it to glass cups. Put them into the fridge for 1 hour long.

Preparation time: 15 minutes (without cooling)

Coconut balls

(very easy to make)










Ingredients:
(for 30 medium sized balls)

70 ml milk
20 decagram margarine (baking margarine)
26 decagram sugar
5 decagram cocoa
50 decagram plain biscuit
4 drops of rum flavour
6 tablespoon of shredded coconut


1, Add the margarine to the milk and cook it in a slow oven till the margarine will be liquid. 

2, Mix the sugar with the cocoa and the rum flavour, then add in the cooked milk and margarin. Mix it well. Pulverize the plain biscuit and add it to the mixture, then mix it well.

3, Form balls from the mixture by hand and roll in the shredded coconut.

Tocsni - V {pronunciation: touchni}

(easy to make)











Ingredients:

1-1.2 kg potato
5 eggs
12 decagram flour
1 tablespoon of salt
1 teaspoon of pepper


1, Peel the potatoes and grate them on a grater with big holes. Add in the eggs, the salt, the pepper and the flour, then mix it thoroughly.

2, Form scones from the mixture by hand. Bake the scones both sides to goldbrown in hot oil.
